Hi Jennifer! Lucky you to soon be leaving the NY winter behind for Disney World! No need to worry at all about height restrictions for attractions. They are all clearly posted, and if you do a bit of research, you can know ahead of time so you won't have any disappointed little ones.

I've attached the link for the attractions for each of the theme parks below, with each height restriction.

Magic Kingdom attractions
Epcot attractions
Animal Kingdom attractions
Hollywood Studios attractions

Many attractions have no height restrictions or minimal one, so your whole family will be able to enjoy it together.
