We are going for 7 days in May. Any suggestions on what park is best to do on what day? We have a 3 year old and an infant.

Hi Cheri!  It is so hard to say which days are the best to visit particular parks but I can tell you what I have learned from my past experiences.  No matter which park you are visiting, weekends are typically more crowded as even the local residents will come visit the parks.  It is also said that Mondays are the most crowded at Magic Kingdom, as that is day that many actually begin their WDW vacations.  Also whenever a park is offering EMHs, you can bet that that park will be more crowded.  I personally don't always find this to be true for morning EMHs, but more so for the evening extra hours.
With little ones, I highly recommend you get to the park early, the later in the day, the more crowded it gets,  So try to make early starts and get to your park of choice before it opens and head straight to your first choice of attractions.
I hope this information helps, and thanks so much for coming to the Mom's Panel with your great question.
