Your stay sounds like you are ready to have a lot of fun and visiting during the holidays is always a special time because the entire
Walt Disney World Resort is dressed in it’s holiday-best.
Magic Kingdom Park will always be atop my list of favorites. Visiting on Christmas Day will be a gift in itself. Most of the days during your stay you will not worry about the capacity of the park becoming an issue. Christmas Day and New Year’s Eve historically have reached capacity and if this is the case you should consider staying at Magic Kingdom Park. If you decide to leave you will not be allowed back in after the park has reached capacity even with a park reservation.
If you need a break I usually recommend a meal where you can sit down for a while and get off your feet, especially on a long park day when you will not be exiting the park. I live for a mid-day break but these particular days you will need to be creative for your breaks. Checking out a show or even just finding a shady spot to relax and enjoy a snack. If you do plan on visiting for NYE I would suggest
EPCOT, historically dance parties are happening all over World Showcase with DJs spinning tunes into the night. But you should consider not leaving this day either as park capacities reach their limit you want to make sure you are set inside a park for midnight.
