We have 6 day park hopper/water park tickets and a family of 5. If someone in our party doesn't use all their visits for the water park option would one of the remaining be able to use their ticket or do they have to use it themselves?

Disney tickets are not transferable. This applies to theme park tickets as well as water park tickets. When you enter the parks, you will place a finger on a pad at the entrance turnstile. A biometric scan will be taken to match a particular person to a particular ticket. Only the person who first used the ticket will be able to use it for subsequent park admissions.

If you have remaining ticket days, you could add the no-expire option to that ticket and thus be able to use your remaining admissions during another trip.
