We will be coming to Disney in Dec and I tried to make ADR for the Fantasmic experience since my son loves it. However, it was already booked. The agent on the phone told me to keep checking back. What would be the best way to do that? by phone or online?

The agent is definitely right! Just keep trying, and actually I would try both ... I would call and check on line as well.  I personally still like speaking with someone, so if it's possible, call each and every day.  This can sometimes really turn into an ADR, as people do cancel.
If you have not gotten the ADR by the time you leave, call when you get there.  And if all else fails on the day you are at DHS, check again to see if anything has opened up.
I'll keep my fingers crossed for you!  Best of luck and have the most wonderful time in December at WDW.
