Hi Nicole! Fruits and veggies aren't too popular with the male members of my family either, so I understand your dilemma!
You don't mention in your question the times of your Bibbidi Bobbidi Boutique appointment and your Akershus reservation. If you have one of the earliest Boutique appointments and one of the latest Akershus breakfast reservations, you'd have a chance of making it to breakfast on time, although you'd be cutting it close. Disney transportation does not run directly between Downtown Disney and the parks, so you have to take a bus or boat to one of the resorts near Downtown Disney and then transfer to a bus to Epcot from there. For this reason, it can take as much as an hour to travel to a park from Downtown Disney, and once you reach Epcot, you'll need at least 20 minutes more to enter the park and walk to Akershus. If you want to have breakfast at Akershus after visiting the Bibbidi Bobbidi Boutique, your best bet would be to catch a cab directly to Epcot after your appointment. here. Disney restaurants are very accommodating of picky eaters, and your husband can request that the chef hold the vegetables on his plate. He can even request an item from the children's menu if he prefers that food, although he'll still have to pay the adult price for his meal.
In addition to being fairly picky eaters, my husband and son don't enjoy meeting princesses as much as my daughter and I do. For this reason, my daughter and I often have a girls-only meal at Akershus or Cinderella's Royal Table while the boys have fun in the park. All of us have more fun that way, and we save money too.
