Hi Stacie,
Depending on what your husband's preferences, I can recommend a few fun places for his birthday.
At this time, you may be limited staying in the Magic Kingdom for lunch or dinner. I would recommend
Crystal Palace with Winnie the Pooh and friends. This restaurant is always celebrating a party. The buffet is good and there are characters who come right to your table. This saves time trying to get other pictures with these characters.
Be Our Guest is the newest restaurant and I am fairly confident that the dinner reservations are sold out. However, they do offer lunch as a counter service option and the food is good. Who wouldn't want to dine in a castle on his birthday?
You may also consider heading to a resort for a meal. One place is
Whispering Canyon Cafe. This is my favorite restaurant and is totally fun! I had my birthday there and it was awesome!
Another place is
The Wave in the Contemporary Resort. A quick monorail ride away and you have a fun assortment of meals. I like lunch here better than dinner only because of their soup and sandwich combos.
If you do make a dining reservation, have it noted it is your husband's birthday for a special treat and remember to stop by Town Hall in Magic Kingdom or your Disney Resort's front desk for a celebration pin.
Wishing you a magical birthday vacation!
Beth
