Hi, Vicki! Longtime fellow vegetarian here, so I completely understand where you're coming from! Walt Disney World Resort has made great strides in the past several years in terms of accommodating vegetarian and vegan guests. When my family arrive at a table-service dining location (in the parks and at the resort hotels), we always speak with a manager or directly with a chef to discuss our options. Many dishes on the menu can be modified to align with vegetarian or even vegan dietary requirements. In some cases the chef will go above and beyond by preparing a special dish! When we're visiting Walt Disney World Resort we tend to prefer a la carte dining and steer clear of buffet and family-style dining venues as we don't feel we get our "money's worth" -- the choices for vegetarians are generally very limited. That being said, one of our favorite places to dine is Tusker House Restaurant in Animal Kingdom Park which offers one of the most vegetarian-friendly buffets on property. The chefs are exceedingly accommodating and we especially enjoy the unique selections that go beyond the "standard American fare" one finds at many of the other buffet locations.
