Caribean Beach Resort is listed as an Epcot Area Resort, does that imply one could walk between them .......FYI, I walk 5 miles daily for exercise, so I'd never rule anything out just because "I'll be doing enough walking that day".

I just used the amazingly cool new Google Earth 3-D look at WDW to find out that, as the crow flies, the center of the Caribbean Beach resort is about a mile from the front gate of Epcot. But even though the distance is not extreme, there is really no feasible way to walk between the two places, no matter how fit you are. There are no sidewalks, trails, or other walking paths that connect the Caribbean Beach with Epcot. Instead, there are large, highly-trafficked roads with no pedestrian signage. It would not be safe to walk from the CBR to Epcot.

If you're looking for a resort from which you could easily walk to Epcot, you could stay at the Boardwalk, Yacht Club, Beach Club, Swan, or Dolphin hotels. These all have paths specifically made for pedestrian travel to Epcot.
