Depending on when you will know for sure if you can go, it's not a bad idea to go ahead and book now. You'll have a better selection of staterooms in various categories and locations around the ship, plus you'll have more time to plan! Take a look at the
Cancelation Policy for Disney Cruise Line on their Terms and Conditions page. You'll see that for most cruises which are less than 10 days long, guests can cancel up to 75 - 45 days before sailing though your deposit would not be refunded. The closer you get to sailing, the more fees you'll incur for canceling. No matter what, it's good to cancel or move sail dates as early on as possible. Better yet, choose a great date now and keep it! I promise you'll have an amazing vacation!
Honestly, though, if you wait a few months from now so that you can be assured of choosing the right date, you'll most likely still find plenty of staterooms available. In my experience, no matter which stateroom you choose, you'll still enjoy a fabulous vacation!
