when I buy a water park option on my pass do I need to go to the water parks on the same day as theme parks visit. Or can I go to a water park one day then look at hotels then the next day go to the theme parks and as a result use one theme park day.

Hi, Clestian! You do not have to go to a theme park on a day you want to visit a water park.  In fact, my family and I spend entire days (open to close) at the water parks.  With the scenario you mention, you would indeed use one day of theme park admission.  Happy planning and have a Magical vacation!
