A valid
theme park ticket and
theme park reservation are required to enter both parks at the Disneyland Resort. You can absolutely purchase two separate one-day park tickets on different days. If you are planning to purchase your tickets at the Disneyland site, you will be prompted to select the day of your visit. Doing this will also simultaneously create a theme park reservation for your visit. If your plans change later on, you can always cancel or modify your theme park reservation.
You might also want to consider purchasing a multi-day ticket if all of your visits will happen within 13 days of the first use. You can select how many days you'd like to visit and when you get to the page to "Reserve Your Ticket Dates" you can select your first visit date and see what other days are available for you to visit (keep in mind that visits do not have to be on consecutive days).

Great Maple, to open at the soon-to-be Pixar Place Hotel. It looks like you will be arriving the day before the reimagined hotel will open. And if you haven't already, there are so many culinary delights to explore in
San Fransokyo Square in Disney California Adventure Park. Still on my list to try is the Japanese-style Fluffy Cheesecake from Aunt Cass Café.
