What an absolutely lovely idea, to take your mother for a last trip to the most magical place on Earth! I know that despite her health concerns, you will all have a wondEARful trip!
It sounds like you've already started to locate the
family restrooms that have plenty of space for companion assistance, and that you have considered renting an ECV. Those are both terrific ways to help to ensure a smooth trip.
I have some other recommendations as well. Be sure to keep your Mom well hydrated in that Florida sun, and to take frequent breaks. I might consider a couple of Table-Service
Advanced Dining Reservations as well, to ensure that you have a place out of the sun to regroup. You should reapply sunscreen frequently to prevent sunburn, as another suggestion.
Have you considered where you will stay yet? If you are staying on site at a
Walt Disney World Resort hotel, you will be able to easily go back and forth to your room as needed. I recommend taking a change or two of clothes for your Mom as well, and if you do have any issues, there are laundry facilities at each Walt Disney World Resort hotel! I frequently take advantage of those myself!
Lastly, I recommend that you keep a copy of your Mom's medications and health records in case of emergency away from home, and be aware of where first aid locations are in each of the theme parks.
