Hi Anthony!
I also have special dietary needs, so I completely understand the importance of making sure allergy-friendly foods are in the parks and resorts. You will be pleased to hear that Walt Disney World does an amazing job at accommodating special dietary needs, especially gluten-intolerances. Almost all of the Walt Disney World Table Service restaurants offer an allergy-friendly menu.
One of my favorite allergy-friendly restaurants is
'Ohana. When I went to 'Ohana for breakfast and told them of my allergies, they brought out a completely allergy-friendly meal, including gluten-free and dairy-free Mickey Mouse Waffles, dairy-free scrambled eggs, bacon and sausage.
Some of the Quick Service restaurants offer an allergy-friendly menu as well.
Pecos Bills at
Magic Kingdom offers a gluten-free chicken rice bowl.
When you arrive at the restaurant you can ask to speak with the chef to ensure they are aware of the gluten-intolerance. You can also make a note of the food allergy on all
Advanced Dining Reservations so they can ensure to offer you an allergy menu when you arrive.
You can also contact
Special Diets ahead of your trip if you have any specific questions.
Magically,
Stacy
