A guarantee room is a great way to go if you aren't all that particular about your exact stateroom. If you booked a category 9A for example, a Deluxe Oceanview Stateroom, you are guaranteed to have at least that category of a stateroom or better. When time comes to assign your stateroom, if all the rooms in that category are sold out, they will bump you up to a better room, perhaps one with a verandah, though you'll still be paying the price of the lower category room. Unless you are very specific about where you need your stateroom to be, a guarantee room is a great way to go, as many times guests find that they get a better stateroom than they paid for! Having sailed in all different types of rooms on the ships, in all different locations, I can assure you that you really can't go wrong.
