We have booked the coronado springs resort for our upcoming trip so I know we should have a refrigerator, but I was wondering if there is a place to go to heat up any leftovers we might bring back to the room. How is this handled in moderates and values?

There really is no in-room method for heating food in any regular hotel room at any level. (There are microwaves and stoves in many villa and suite-style rooms.) There are microwaves available for guest use in the food court areas at every WDW hotel. You would be welcome to use the microwave ovens there to reheat items.
