Absolutely. There are behind the scenes tours available at all four of Disney's theme parks. There range from low key and inexpensive (the one-hour Behind the Seeds tour at Epcot) to in-depth and pricey (the eight hour long Backstage Magic tour).

Another great resource is the wonderful independent website allears.net. They have a "rate and review" section where other guests give reports about their experiences on Disney tours. This can give you a good handle on whether a particular tour is right for you.
I personally have take half a dozen different Disney tours. A good starter tour is probably the Keys to the Kingdom tour at the Magic Kingdom. You get some great access to the backstage areas at the MK, but you only have to make a half-day commitment to the tour.
