Hello Tara! I began taking my children to the Most Magical Place on Earth when they were just 3 months old as well. They may not remember these trips, but I have memories in my heart that I will cherish for a lifetime. I hope you make so many magical memories while you are on vacation as well.
Yes, you can use the car seat/ stroller combo at Disney Parks. When I would travel using Disney bus transportation I would take the baby out of the car seat carrier and hold him in my lap, while my husband folded the stroller and held onto the carrier. All strollers must be folded on Disney bus transportation, and you can not use the carrier on the bus as a car seat as there are no seat belts to safely strap them in. When you use the monorail or larger boats the stroller can stay open with the carrier and baby inside, so it will not be a problem for you.
Tara, while you are at the parks please take advantage of the
Baby Care Centers. They offer a fabulous diaper changing area, nursing area and a shop selling baby supplies that you may have forgotten. I have used these facilities many times and highly recommend them.
