We are arriving in the evening on the 3rd and checking out on the 8th. We have 5 day tickets. Even though we are checking out on the 8th can we still use our 5th day ticket on that day as well as our dining plan meals? Thanks

Hi, Kasia! Your theme park tickets do not expire until 14 days after the first use, so absolutely no problems there.  Your Disney Dining Plan entitlements do not expire until midnight on the checkout date of the package reservation.  So, you will be able to use them on your last day.  In fact, you can have breakfast, lunch, dinner, and/or snacks on your last day as long as you have the entitlement credits left on your Disney Dining Plan. Happy planning and have a Magical vacation!
