Molly,
Thanks for asking your question to planDisney, all the way from Indiana! It is always nice to see a fellow Hoosier getting ready for some Disney magic!
I don't think you will have to worry about what park to visit on each day during your trip in November. Attendance indeed rises during any holiday, but during the Veteran's Day weekend, you will find that the increase in attendance is more tied to it being a weekend, rather than that particular holiday.
Also, know that the
Disney Park Pass System that currently requires you to have a Theme Park Reservation for your first park of the day does help keep the crowd levels manageable, so no one park should be overwhelmingly packed as compared to the others.
If it were me, I would try to end my trip on Friday at the
Magic Kingdom.
Why? Well,
EPCOT will be busier because it is a weekend evening and the
EPCOT International Food & Wine Festival will be underway. Guests and locals love to dine at the festival stands and the restaurants of the World Showcase.
Disney's Hollywood Studios will also be busier as well.
BONUS TIPKeep an eye out for some Veteran's Day activities that can be seen around the parks and resorts. The Magic Kingdom is likely to have some wonderful celebrations, especially on Main Street, U.S.A., and Liberty Square.
BOTTOM LINE
While I don't know what parks are in your plans, I would save the Magic Kingdom for an iconic ending to my trip and schedule any visits to EPCOT as early in my plans as possible.
