You mentioned you aren't sure which hotel to choose, but it looks like you are asking about only one hotel,
Hilton Cocoa Beach Oceanfront. I have good news for you! This is an excellent choice and is one of the hotels that Disney Cruise Line uses for pre-cruise stays. For transportation from the hotel to the port, you will book it directly through the hotel.
The other pre- and post-cruise stay hotel Disney Cruise Line recommends when sailing from Port Canaveral is the Hyatt Regency Orlando International Airport. This hotel, located in the airport, makes your arrival and departure a real breeze.
Ground Transfers from the hotel to the port on embarkation day can be booked through Disney Cruise Line. These reservations must be made at least two weeks prior to your vacation.
Now, if by chance you meant the Hilton Garden Inn Cocoa Beach Oceanfront, I did notice this hotel is close to the Hilton Cocoa Beach Oceanfront. I did a quick search and found that the Hilton Garden Inn does not provide a shuttle to Port Canaveral, so you would need to use another method such as a ride-share app.
