Hi, William!  You really have an awesome list of things on your itinerary!  I'm not sure there are many musts left to pack in on one trip!

I usually recommend a character meal with young children, and you've got that covered.  Taking in a show is also accomplished with La Nouba.  You've got one of the most coveted meals planned at Be Our Guest.  The Pirates and Pals Fireworks Voyage is one of my favorite things to do, and an amazing way to enjoy fireworks.  Topping it all off with the gospel brunch just rounds out an amazing trip!

I'll suggest that you take time to enjoy some of the other fun things for little kids.  My girls love watching the Electrical Water Pageant, which takes place nightly on the Seven Seas Lagoon.  You can view it from a variety of places, but our favorite is the beach at the Polynesian resort.  Another must do for my kids is a trip to Animal Kingdom Lodge in the evening to hear the African Storytellers at Arusha Rock, overlooking the savanna.  And if you have down time, especially with a little girl, my small ones have always loved having tea at the Grand Floridian.

You've covered a lot of bases, though, and I can't imagine with the list of things you have planned that there's time to add much more!  I hope your vacation is absolutely wonderful!
