Walt Disney World Resort, so I'm thrilled to assist you with this question!
I've always found that the servers at Table-Service restaurants try their absolute best to ensure Guests have a magical dining experience. Although it is up to the discretion of each restaurant, I have been able to order a kids' menu item when I have asked. I often like to order an appetizer or a dessert, so I will sometimes order a kids' entree so that I can try more menu selections without filling up so quickly. At Table-Service restaurants featuring a buffet or an all-you-care-to-enjoy menu, you will be charged adult pricing. That being said, I would definitely recommend asking your server if you find a Table-Service restaurant in which you prefer something from the kids' menu. I find it never hurts to ask.
