Splash Mountain is my very favorite ride at Walt Disney World, and my Mouseketeers feel the same way. It’s our laughing place!
I have great news for you, Erin. Your oldest is 7 years old, and that’s a magical age when it comes to riding Disney attractions! (My family actually did a little Disney happy dance when my son turned 7!). According to the
Walt Disney World Resort Park Rules, “to board an attraction, children under age 7 must be accompanied by a person age 14 years or older.” This means that your 7-year-old will be able to sit alone while you sit with your 5-year-old on any two-seater attractions. Having said that, I realize you or your 7-year-old may not be comfortable with them sitting alone or beside a stranger, so I have some more thoughts for you.
If it’s more comfortable for you and your kiddos, you should be able to sit three-across on Splash Mountain. I’ve also been permitted to sit behind my two children, as long as we’re in the same ride vehicle, although this depends on the attraction. This is at the Cast Member’s discretion; they know the safety and logistical aspects of the attraction best. My advice is to check with a Cast Member as you enter the queue, and they’ll be able to advise as to the best configuration.

Play Disney Parks app recently added a fun Splash Mountain game that you can play while waiting in the queue or anywhere at Walt Disney World. My little critters love the Play Disney Parks app - it lets us have fun while waiting, making the time pass so much more quickly.
