Now that the youngest in our family of 5 is out of the "pack and play" age, we have fewer options with resorts. I know that POR allows 5 in a single room with the use of a cot, but are there only certain rooms where this applies? Deluxe & suites?

The rooms at Port Orleans Riverside that can accommodate a family of five are located in the Alligator Bayou section of the resort.  The fifth person can be accommodated on a trundle that really is only suitable for a young child because it is not a standard twin sized mattress.  Alternatively, most of the deluxe resorts can accommodate a family of five in one standard room with the fifth being accommodated on a sleeper sofa.  Of course, Disney's new Art of Animation resort can sleep a family of six as can the suites at Disney's All Star Music Resort.  Lastly, the cabins at Fort Wilderness can also accommodate a family of six.  I hope that helps!
