I have a 5 year old and a 7 year old...can they both go on most of the same rides or is their an age restriction and/or height restriction?, i.e., 5 and under or 6 and up?

Walt Disney World attractions don't necessarily have age limits, Julie.  What you will find is that there are height restrictions for some attractions, though the vast majority are accessible to everyone.  There is a great resource available by clicking HERE that lists attractions with height restrictions in each of the parks.  I would recommend checking height at home and then preparing your kiddos for which attractions they will not be able to experience this trip; that might save you a meltdown or two in the parks.  Each attraction with a height requirement also has a "measuring stick" at the entrance just to double check.  I hope that helps!
