Our daughter went vegetarian around age 13, too, and we've been navigating vegetarian options ever since.
You'll be happy to know that
Walt Disney World is one of the best places on the planet to be able to eat well despite dietary restrictions. I always let our server know that we have a vegetarian at the table, and then ask if there is a vegetarian menu. Some locations have an entirely separate menu for vegetarians, and those that do not will often be happy to adapt or combine menu items so that your daughter will feel that she has many options throughout her stay. The very least choice she'll have is the meat-free option that's listed on the menu, but chefs are often happy to work with guests to find something that's truly special, all while taking into consideration their culinary needs.
A great source of unofficial information on all things Disney, AllEars.Net includes some very useful information on vegetarian dining. In the search bar there, enter "vegetarian"; you'll find a list of great links with reviews, articles, photos and suggestions for those dining vegetarian.
When choosing locations, too, check out the menus that are posted online, as some offer vegetarian-friendly options such as tofu (
