Unfortunately, I'm stumped. I can't find any references a desperado steak at Disney or a description of a steak cut by that name on any food websites. So I'm wondering if the person who recommended it to you might have confused the name with another cut that takes its title from the Old West. My best guess is that you are looking for a cowboy/tomahawk ribeye. That bone-on cut is often quite large and is frequently described as one of the most tasty cuts of steak available.
The
Yachtsman Steakhouse changes its offerings from time to time, so even though there's not a cowboy steak listed at this moment, it might reappear in the future. You will find a cowboy/cowgirl/tomahawk steak on the menu of other premier Walt Disney World restaurants, including
Shula's Steak House in the Dolphin resort,
STK Orlando in Disney Springs and
Flying Fish at the Boardwalk.
My family loves a good steak, and we're fans of Yachtsman. But our favorite steak at Walt Disney World right now is the oak-grilled filet at
Jiko in Animal Kingdom Lodge.
