Is it worth doing the waterparks in early November or is it too cold then?

Hi Robert! As a fellow Northeasterner, I'll tell you that swimming in November should not be a problem. My kids and I have gone swimming, in the evening, IN DECEMBER, and had a blast. Another time, while I was down for Mom's Panel training last December, my wife took my two girls to Blizzard Beach, and although they said it was by no means packed, they did say it was pretty full, but that everything was so much easier to get on. They had a terrific day! A water park in early November can still have temps in the high 80s...maybe not as many hot/warm days as July or August, but you will still get your money's worth.
I hope you have a Magical vacation!! :)
