Happily Ever After are two amazing experiences and I'm excited you're trying to squeeze in both during your Magic Kingdom Park day.
In thinking about your conundrum, I'm reminded of the words of King Mufasa talking to Simba when he said,
"Everything you see exists together in a delicate balance." A meal inside Cinderella Castle, with multiple courses and a Royal presence, is meant to be savored, not rushed. Unfortunately, this also means it's difficult to predict how long your dinner might last. As you're considering plans, it's also important to note that guests will often start congregating along Main Street, U.S.A., and in front of the castle in preparation for fireworks 45-60 minutes in advance. I believe it's very possible that with a 7:30 PM dinner reservation, you would miss the beginning of Happily Ever After. If you've already secured your dining reservation and fireworks are important to you, I would encourage you to check back every day to
modify your time in case an earlier reservation becomes available. (When I'm searching for a different time, I'll set a daily alarm to remind myself to quickly check in the weeks and days leading up to my vacation.) In fact, my family loves to enjoy a Table-Service meal at lunchtime so that we have plenty of flexibility to snack and relax before the fireworks.
