I was wondering if I buy 10 days worth of tickets ( no hopper) but will only be using 5 days on our next trip can I think buy the no expire date for the remaining 5?? Also what would happen if we used them a year or 2 later but my daughter is now 9??

Hi Amber!  You can definitely add on the "no-expiration date" option to your tickets.  You can take them to any guest relations desk to add that option on.  This is such a great option for your tickets!
If your daughter has reached "adult status" when you return to use the tickets, simply take her ticket to a guest relations desk and they will replace hers with an adult ticket at no additional cost.
I hope this helps!  Enjoy your trip and be sure to put those tickets in a safe place for future use!
