Kids Nite Out, which is affiliated but independent from Disney, offers 24-hour service. I recommend you visiting their site to familiarize yourself with their program and costs.
As to your date, obviously everyone has a different idea of the perfect date night. I will share mine, but feel free to write me a question directly from my bio page with more information about what you and your wife like so I can make other recommendations.
For me, it's the
California Grill. A beautiful view, no cartoon characters, and amazing food. It is pricey, but we save for this special occasion. Get a table on a night that
Wishes is scheduled so that you can watch it from your table, or the veranda outside.
Another great idea is to pick a restaurant at the Epcot World Showcase that has a cuisine that you both like. Arrive early, walk around the pavilions, do some shopping, and maybe get some "to-go" appetizers and drinks. After dinner watch IllumiNations!
Some more revved-up choices could include hitting a park for a night of rollercoasters, or visiting Downtown Disney or the BoardWalk!
