I'm going to assume that you are referring to room reservations at
Disney Resorts Collection Resorts, but if that's not what you're inquiring about,
please write back to clarify.
Availability and pricing are dynamic and based on many factors. In my own experience, I can do a search and see available options, and then see different options when doing the same search later the same day. I know it can be frustrating, but while you're focused on planning your own vacation, it's easy to forget that thousands of other Guests are booking or changing their plans at exactly the same time.
I don't know if the example you gave represents the dates you are actually searching for, but if so, I was able to find some great accommodation options for January 1st through 6th including rooms at
Disney's Animal Kingdom Lodge,
Port Orleans Resort - French Quarter, and more. When I extended the search to go through the 8th, these Resorts were still available, but some of the Deluxe Villa Resorts were no longer available.
You should also know that when you are searching for
Special Offers or promotions, the inventory available for these can be limited. So, you might not see
any availability when looking for a Special Offer, but will see availability if looking at regular room rates for the same dates. You can investigate this by changing the type of offer you are looking for. Once you select a specific Resort, this option is located just under the blue bar showing the dates you're searching for. "Room" will be the standard rates, "Package" will include both a room and Theme Park Tickets, and other Special Offers may be listed as well. Simply click the circle next to each offer type to switch and see the different rates and availability.
Offers can have any number of terms and conditions, including the required inclusion of a weekend or a stay of at least a certain number of days. If the dates you are searching for don't align with those terms and conditions, you wouldn't see availability. That's what may be happening in your situation.
