Hi Laura, and welcome to the Disney Parks Moms Panel! Thanksgiving is just around the corner, so let's fill up on all the fun to be had at the Walt Disney World Resort.
While the first few weeks of November can see lighter crowds overall, the closer you get to Thanksgiving, the more those crowds will pick up as families decide to visit when the kids are out of school. But as any Disney Mom will tell you, you can enjoy Walt Disney World anytime with a bit of planning.
First, I'd take a look at some crowd calendar sites you can find on the Internet. We like easywdw.com because it's generally pretty accurate and - bonus - it's free! You can plan which Theme Park to hit per day of your visit based on the predicted crowds at each. It's one way to make sure you can do all your "must-dos" in the Parks.
Next, get to work on your FastPass+ selections. You can choose three attractions per day in a single Park to help plan your time and minimize waiting in line.
Another key strategy is one the Disney Moms employ regularly: arrive at Park opening, or "rope-drop." Get there at least 15-30 minutes before opening and you can hop aboard many attractions with little to no wait. Combine that with late-morning to early-afternoon FastPass+ selections, and you'll be sure to get in just about everything you want to do.
