what week would have the smallest crowds?

Tangie it is impossible to know what week through-out the year will have the least amount of crowds at the parks.  Each year changes but it is always good advice to come when children are in school if you want to find smaller park attendance.

Traditionally some of the least crowded times are the following:
Second week of January until President's Weekend in February (except Marathon Weekend)
Week before Labor Day until the start of the EPCOT Food and Wine Festival (late September, early October)
Week after Thanksgiving until the week before Christmas
