Be Our Guest Restaurant in the Magic Kingdom is very popular, so I'm not too surprised you are having difficulty securing an advance reservation for dinner. I do recommend continued checking though, because people do change their plans, and those reservations will be put back into the system. I have heard that at this point, they are not accepting walk-up guests for dinner, so you would need to have a reservation to dine there. However, you can always inquire if you are passing by, and you might get lucky.
Lunch at Be Our Guest is served "counter-service" with no reservations required. I can personally tell you that lunch at Be Our Guest is a wonderful experience, and I don't think you will be disappointed. They have a very delicious menu, which is served on china plates with real flatware and delivered to your table - not your average counter-service lunch! The entrance in to Be Our Guest is controlled by a Cast Member - this is done to ensure that there are tables and space for all guests wishing to enjoy lunch there.
