This is a great question! I don't know that I would have even remotely thought about this until I arrived at a theme park and then looked puzzled as I tried to figure out how to navigate things.
There are a few attractions that might give you a bit of a challenge, but there is really only one that I think might cause you issues.
On
Avatar Flight of Passage at
Disney's Animal Kingdom Theme Park, you journey on the back of a banshee during an amazing adventure. This is one of the most incredible attractions I have EVER experienced, so I'm hopeful you can find a way to make this work for you. The banshee will very much resemble a motorcycle seat you will straddle, so this could be challenging in your skirt.
In
Magic Kingdom Park, you may have a slight issue on
Astro Orbiter and
Space Mountain (due to a step down and having to straddle the seat in front of you).
Rock 'n' Roller Coaster Starring Aerosmith at
Disney's Hollywood Studios has a big step down to board the ride vehicle.
Test Track at
Epcot is similar with a big step down.
In my opinion, with exception to Avatar Flight of Passage, the other attractions should be manageable. I will let you know; Avatar Flight of Passage has a test seat outside of the attraction entrance that you can use as a guide to see if it will work for you. I highly recommend you visit the test seat to see if you can make it work. I'm sending pixie-dust your way as it really is a can't miss attraction!
