With your arrival date of April 28, you should be past the spring break rush and before the summer vacationers, so the crowds should be manageable.
I really enjoy the evening Extra Magic Hours. The temperatures are cooler and I love seeing all the lights around the parks. In my experience, it seems like the first hour of Extra Magic Hours is a bit crazy, but then the crowd seems to thin out. To best avoid these crowds, perhaps schedule a late dinner in the park, and by the time you finish eating, the park will be welcoming for you!
A lunch at
Cinderella's Royal Table is a real treat. This is a fun experience and a great chance to feel like royalty! I would keep this reservation if I were you, but you know what you will enjoy the most!
