We are going to WDW the last week in February... it's a little late for dining reservations but I found one at Akershus for breakfast. We had not planned on taking our kids to Epcot. Can we make reservations to a park that we don't plan on staying at?

Absolutely, Kori!  My concern, though, is whether or not you have park hopping privileges on your theme park tickets.  If so, you would simply head to Epcot on the morning of your dining reservation and have that breakfast with the princesses.  Once you finish your meal, you simply "hop" over to the park you intend to spend more time in.  If you don't have park hopping privileges on your park tickets, you would not be able to visit a second park after your Epcot breakfast.  Personally, I would suggest that you do stay and explore all that Epcot has to offer; it's a fabulous park.  But if you choose not to, just be sure that you have added the park hopper option to your tickets or you won't be able to visit a second park after breakfast.  I hope that clears things up for you!
