I hope that I can help you feel less stressed about your upcoming Walt Disney World vacation! My advice for you is that you will be fine with the Disney Dining Plan, which includes table service dining. Let me offer some thoughts on why.
Looking at the
hours for Walt Disney World theme parks, I see that you are correct, most of the theme parks have a closing time listed of 9:00 p.m. at the latest for the week that you are visiting; however, check out Disney's Animal Kingdom! Due to the much-anticipated opening of Pandora - The World of Avatar, Disney's Animal Kingdom will be open until 11:00 p.m. each night, which gives you one theme park that you can explore later each night.
Since you purchased a Disney Dining Plan, you must be staying at a Walt Disney World resort hotel. As such, you are eligible to participate in
Extra Magic Hours, during which a select theme park is open earlier or later for Walt Disney World resort hotel guests. Extra Magic Hours are listed on the theme park schedules that I linked.
Finally, the Disney Dining Plan offers dining not only in the theme parks, but also in Disney Springs and at Disney resort hotels as well. If you prefer to experience a theme park right up until the park closes, you could look for a dining location at one of these locations outside of the theme park after the theme parks close. You could use your snacks and quick service meal early in the day, and then enjoy a late-night dinner at one of these non-theme park locations. Here is a listing of
