You've picked a great time to visit! There aren't any big special events going on in the theme parks but there are a couple of things taking place at the ESPN Wide World of Sports Complex that may bring in additional Guests visiting the theme parks. The 2011 National Dance Team Championships will take place on Feb 5th - 6th, 2011. The Disney's Field Hockey Showcase is being held Feb 9th - 13th, 2011.
Magic Kingdom (MK) tends to be the most popular park & more local residents visit during the weekend. While I still don't think it will be super crowded, you may want to visit MK on other days. If the nighttime parades & fireworks are on your must do list, check the schedule & go to those parks on the day they are offered. If you're staying on property with 2 little guys who'll be full of energy in the morning so I'd plan on visiting the parks with Extra Magic Morning Hours.
I checked the online for closures during your visit. At MK, the Liberty Square Riverboat is closed until 2-4-11. At Hollywood Studios, Star Tours is closed now thru 5-19-11. Playhouse Disney-Live on Stage! will be closed Jan 30th - March 5, 2011. At Animal Kingdom, Primeval Whirl is closed until 4-16-11. Keep in mind that attractions may close without notice at any given time for a number of reasons.
