I am a teacher, so my family's trips have always been scheduled around school calendars--mine included. I totally understand your concerns and need for more information.
Martin Luther King Weekend is a great time for educators to head to WDW for many reasons. The temperature is milder than in other months, and crowd levels will be lower than peak seasons. However, you may have fewer days away from school at that time--a long weekend, perhaps--so you'll have less time to really enjoy the parks while there.
Spring break can take place at different times, so if yours occurs during a week
other than the one before Easter, crowd levels should be reasonable. The weather may be warmer, so swimming at a
Walt Disney World Resort hotel or a trip to
Walt Disney World water parks would be great.
If spring break includes the days leading up to Easter, however, you will find much heavier crowd levels; this is not a problem if you plan your touring very carefully, though.
Also, check dates for
Epcot International Flower & Garden Festival. This is the time of year when the already gorgeous Epcot bursts with flowers; it's truly a spectacular sight to see, and may sway your decision on when to visit WDW for the first time.
