If you go to any of the
Deluxe Villas and stay in at least a one bedroom villa, you will find a full working kitchen with supplies you need to prepare meals. These are designed after the Disney Vacation Club (DVC) rooms. I am a DVC member so I usually stay in one of these rooms on vacation. You can bring your own groceries or order from the store at at the resort. I usually bring my non-perishables with me and then pick up perishables from the store.
I think all the resorts are wonderful for children with special needs as my oldest daughter is a child with special needs. We have stayed at all of these resorts without a problem.
When trying to decide on a resort, think about what parks are you going to be visiting most and pick this as home base. When our girls were in strollers, we stayed at the
Boardwalk. This allowed us to push them right onto the boats in their stroller to get to EPCOT or Disney's Hollywood Studios. Because we had park hoppers, we would come home to the Boardwalk from Magic Kingdom by taking the monorail to EPCOT and walking through the park with the girls in the strollers no juggling children and strollers.
There are buses which are handicap accessible which run throughout the parks and resorts.
