We are visiting the parks for six days during the last week of January. We don't have PH but would like to take advantage of EMH which would mean staying at the park all day. Would the lines be much longer at the EMH parks during that time of the year?

Definitely take advantage of the Extra Magic Hours. Lines will be shorter during this bonus time for guests staying at a Walt Disney World Resort so you should be able to knock out several major attractions before crowds pick up.  Late January wait times should be quite reasonable so I believe you will get full enjoyment out of the parks. Though the buzz says crowd are bigger in parks on the days they offer Extra Magic Hours I have not noticed an overwhelming difference. Certainly nothing to offset the beauty of the lower crowds during Extra Magic Hours.
