Welcome to the Disney Parks Moms Panel! I also have a fussy eater at home, so I can understand your concerns.
Your son should be able to order a meal from the children’s menu at Table-Service locations and redeem it with his adult
Disney Dining Plan entitlement, but I believe this is not in your best interest as adult entitlements have a higher value. Restaurants are usually very accommodating regarding small changes or substitutions, and while those are not guaranteed, I recommend talking to your server to verify if that's possible.
I have two extra tips:

Go over
restaurant menus online to determine which ones are more suitable for your party, and make advanced reservations.

Make reservations at buffet restaurants because they offer a great variety including children’s stations.

Bring some of your son’s favorite snacks to the parks. This has helped me tremendously with my daughter.

If your son does not like the food after it arrives, talk to your server and see if it is possible to order another dish or make changes. Once I ordered lunch and the food was too spicy. Our server changed my order right away. Again, Cast Members do their best to accommodate Guests, but sometimes this might not be possible.
