May 15th is my birthday! So, I'll be imagining you there wishing I was celebrating there, too! :)
My daughter is 5 so I know it is important to see Rapunzel and the Princesses! The wait for Rapunzel is definitely long--I was there a few months ago and I asked the Cast Member when the best time is for seeing Rapunzel and Flynn. She told me to be there when the park opens and run to the Fairytale Garden to be first in line! So, that's what I'd do!
For the other Princesses, they have a new Meet & Greet in the Town Square Theatre where you can get a FAST PASS to see Mickey & Minnie or the Princesses! You can read about it on the

As far as your short vacation--you still have plenty of time to hit as many parks as you can handle. If you have park-hoppers, you might want to just hit up your favorite rides at every park and do to two parks in one day. OR go low-key...as much as I love to do the parks every minute of my vacation, it is really nice to spend a day away from the parks and hang out at the hotel and pool or doing something else relaxing like shopping or mini golf.
