What wonderful grandparents you are! We often travel with my parents and they take my kids, and I can tell you how much it means to me, so I am sure this will be meaningful for your son and daughter-in-law. Plus, your grandkids get to make some special memories with Grandma and Grandpa. What a win-win situation!
I am going to guess you would prefer a restaurant outside a theme park to make the logistics of the evening a bit easier. I have 3 suggestions for you:

Chef Mickey's at the Contemporary. This awesome character buffet is hosted by none other than the Big Cheese himself - Mickey Mouse! Joining him are Goofy and all their pals.

Rainforest Cafe in Downtown Disney. So much to look at and enjoy in this restaurant, and also great food. After, you can explore Downtown Disney with all its shopping.
-Beaches & Cream Soda Shop at the Beach Club (on the Boardwalk.) This fun restaurant has burgers, hot dogs, and the best ice cream around. Want to do something really fun? Order the "kitchen sink!" It is filled with ice cream, toppings, and spoons for all. Almost impossible to finish, but you will have fun trying. After dinner, you can stroll the Boardwalk and enjoy the wonderful atmosphere.

Advance Dining Reservations, and Beaches and Cream is a table service, but does not take reservations. If none of these restaurants are what you are looking for, let me know and I can suggest some others.
