In our experience, servers have not replaced entire meals if our children didn't eat them, although typically the children's meals on the Disney Dining Plan are simple. The one children's menu coming to mind with a bit of variety is Be Our Guest. Arriving at lunch is first come, first served (no reservations accepted) and counts as a quick-service entitlement on the Disney Dining Plan. She can choose from turkey meatloaf, seared Mahi Mahi, slow-cooked pork, and more.
What I would also suggest is to check out all-you-care-to-eat meals. This way, your adventurous diner can try many different options! I happen to think buffets are an excellent way to maximize your table-service credits. You can filter the following dining link by "
buffet/family style" to see what might be available for Advance Dining Reservations. Boma at Disney's Animal Kingdom Lodge comes to mind as a varied buffet with African specialties. Your princess might love exploring these dishes!
