Guests of all ages will love Captain Jack Sparrow's Pirate Tutorial. Your children will think it's way cool.
This is an interactive performance that's held at various times throughout the morning and afternoon hours. For the exact times during your visit, I'd recommend either grabbing a Times Guide upon entering the Magic Kingdom or downloading the My Disney Experience app on your smart phone which will give you everything you need in the palm of your hand. You won't need to sign up in advance, so you can stop by and watch the performances at your leisure.
As far as participation goes, if your children want to be selected as Apprentice Pirates for the performance, my advice would be to show up 5-10 minutes before the scheduled show time. That way, you can be be front and center when the time comes for selecting spirited Pirates-to-be. (If your children don't get selected for the performance, it's okay because it's still a lot of fun and interactive for everyone in attendance.)

The Pirates League, which is located next to the entrance to the Pirate of the Caribbean attraction. The cast members there do an awesome job of transforming guests into swashbuckling pirates!
