We would like to visit WDW at a time when it is the least crowded. What is the week of Labor Day like? I am thinking it would not be very crowded with kids going back to school. Is there a better time in the fall to visit?

The week of Labor Day is indeed considered a "least crowded" time for the parks.  This is based on previous numbers as it is impossible to determine exactly.

It is still quite warm during that time but without the crowds the lines are shorter and the heat not as unbearable.  September in general is a light month but once the EPCOT Food and Wine Festival begins at the end of September the crowds will definitely grow.  November is also a nice month to visit as the temperatures are cooler.  In the past, early December was also quite light with crowds although that has started to become more popular.
